I thoroughly enjoyed making this bread. I had to figure things out as I went along. My first attempt to make the cracked rye was to use my meat grinder.
I started this dough out in my kitchen aid but quickly moved to my 12 quart Hobart mixer and it was able to handle this easily.
I then found out the hard way that my GE oven will turn itself off after 12 hours. Thankfully, that was at 6 am so I just started it back up.
I was surprised that the dough flavor seemed to lack salt. I know for a fact that I put the 1 tablespoon of regular table salt in.
